A sandwich rich in typical Apulian tastes and enriched by the unique flavour of the goat cheese Capra di Puglia. Cook the zucchini in salty water and drain them when ready. Blend them together with lemon juice, almonds and the mint leaves. Spread the obtained paste inside the sandwich. Add the 5 mm thick slices of Capra di Puglia cheese, the eggplants, the crumbled friselle and the sweet potatoes.
