In the heart of Apulia, where Valle d’Itria begins, you can find the farm IL CARRO. Born from the passion for nature, animals and the traditional agriculture activity of our Region, the farm has been conceived to become a real “teaching farm”, with the aim of realizing a project of “short supply chain” where the consumer can come into direct contact with the producer.
Currently the farm has focused its activity on the land farming and goat breeding as well as milk production and processing.
The farm consists of a livestock area, a factory for milk processing and cheese aging, a wide and bright shop where you can buy and taste our products.
The animals are reared in modern facilities, conceived and realized in conformity with all current laws concerning animal welfare and safety and they are fed mainly with forage and grains, which are self-produced under organic farming methods.
During favorable climate periods of the year, animals can pasture free so they can feed themselves with natural grass rich in local micronutrients and vitamins.
Milking processes take place with the help of the most modern and innovative techniques and equipment. The milk excreted from the udders of the animals is subject to daily analytical checks in a small laboratory situated within the farm, in order to monitor its physico-chemical and microbiological characteristics before processing it.
Within the farm, we find the cheese factory where the milk is transformed to make cheese, resulting from the combination of production methods, traditional recipes and modern working tools. These production and aging processes take place under the careful eye of our expert cheesemakers and technicians until the final products reach the sale.
Thanks to the geological characteristics of our territory and to the presence of karstic rock of Murgia, it has been possible to realize in the underground of this facility a natural environment dug into the rocks, where our cheeses are aged and refined as it occurred in our farms in the past.
